Hootenanny Hotcakes



Some might call them German oven pancakes. Either way they are a nice change to the ordinary pancakes. Fast & Easy to make.
I had these growing up and I now make them for my own family.
Everyone loves them.

6 eggs
1 C. Milk
1 c. Flour
Dash of Salt
1 Cube of Margarine

In a 9x13 pan lightly greased place the cube of Margarine.
Place this in the oven to melt while it is heating to 350.
Watch carefully so wont burn.

In a blender place all other ingredients.
When margarine is melted, pour batter in pan.
Blend the margarine & batter together. ( it will separate from the batter, this is OK.)
Bake for 30 minutes. When first taken out of the oven; it will be puffed up and with large "bubbles". It will "fall" as it sits.
Serve with warm maple syrup and powdered sugar.

Summer Soup with Sausage

I love fresh veggies from the garden.
And during Summer, if you have a garden you probably grow some type of squash.
My favorites are Crook Neck (yellow) and Zucchini. In this soup you can use whatever type of squash you want. (I just typed in zucchini)
And meal in the Summer that I can make that
doesn't heat up my home is a Good thing!

1/2 lb. Pork sausage; browned & cooked
1 chopped Onion
1 clove of Garlic; minced
3 (14 oz.) cans of Chicken Broth
28 oz. can Crushed Tomato
2 med. size Zucchini; diced
2 carrots diced
3 stalks of Celery diced
1 green pepper; diced
1/2 tsp. Oregano
1/2 tsp. Salt
1/2 tsp. Pepper
1/2 C. uncooked Macaroni noodles


Place cooked meat into Crock Pot. Add all other items.
Cook on Low heat for 4 hours until noodles are cooked.

Pork Chili Verde


I made recipe up while looking for something 
that could feed a few, plus freeze for an easy dinner for later.




Pork Chili Verde
3 3/4 lbs. diced lean pork
1 (21 oz.) can of green enchilada sauce
1/3 C. chopped Onion
1/4 C. green onions~ chopped
1 fresh jalapeno~ diced
1 (4oz.) can chopped green chilies
garlic powder to taste
black pepper to taste
cilantro to taste

I cooked this all day in the slow cooker.
 I just browned the pork first, then placed it in the crock pot.
 Adding in the remaining ingredients.
Serve with flour tortilla's.

Old Fashion Peach Cobbler



This is a Family recipe that I grew up with.
And still to this day I prefer this Peach cobbler over
The biscuit topped type. I love eating it while it's still warm.

1 Stick Butter
2 C. flour
1 1/2 C. sugar
1 TBSP baking powder
1 1/2 C. milk
1 (29 oz.) can of sliced peaches

Melt the margarine then set aside. In a bowl mix all dry ingredients.
Then pour melted margarine into the dry mixture.
Stir until margarine in blended. ( Mixture will be clumpy)
Next pour the milk in, and blend until smooth.
Pour this mixture into a sprayed 9x13 pan.
Place the peaches on top of batter (saving juice until last)
And last but not least pour the peach juice over the top.
Bake @ 350 for 1 hour
Let set for 10 minutes before serving.
You can serve this warm or cold.

I Can't Believe It's Not Butter

If you are of the 1% who hasn't tried this product
YOU NEED TO! This is one item I buy in "tub" from Costco!
Anyone who is on a diet or life style change to eat better,
this stuff is wonderful! It comes in 2 different types: spreadable or spray
I love them both! I first really tried this when I joined Weight Watchers
years back. It "hooked" me when they said it was point free
if you use less than 5 sprays. And half the time I didn't even need that many sprays.

And being a Baker I have even made cookies with it.
And they tasted & looked great!

Strawberry Cheesecake Stuffed French Toast


How many ways can I say YUMMY?!
After you have french toast this way, you'll never want to make the "original" kind again.

You can make it into any flavor Cheesecake, by just changing the preserves.
Also you can use pie filling instead of preserves.
Cherry, apple and blueberry pie filling work the best.

8 oz. pkg. Cream Cheese, softened
4 TBSP. Powdered Sugar
4 TBSP. Strawberry preserves (or pie filling)

4 eggs
1 C. half-and-half
4 TBSP. Sugar

16 slices of white bread

Softened Margarine

Combine the Cream cheese, powdered sugar until smooth. Stir in preserves.
Spread cheesecake mixture over 8 slices of bread; top with remaining slices to form a sandwich.
Whisk together half/half, sugar & eggs.
Dip each "sandwich" into egg mixture covering each side.
Melt approximately 2 TBSP. margarine in skillet (for each sandwich)
Cook "sandwich" 2 minutes on each side or until golden brown.
Serve hot with Syrup and powdered sugar.

I doubled the recipe and had ton's of filing left over....so we used it as a topping as well.

Willow Tree Angels

These figurines are so nice. They each have there own "meaning" and I am sure that everyone who purchases them, interprets that to their own life. I received my first one from my husband.
Since then I am a collector. I have received one every Christmas, Mother's Day, Valentines Day and some just because.


I have given some to friends myself, they say that they loved them so much they are now a collector too! I have some that I wanted just because I thought they looked cute.
Other's Have a special moment that I wanted to remember.....Like my wedding Day. My Daughter's birth. My first marathon.

If you need to give a special gift to someone, I am sure they would NOT be disappointed with any one of the many Willow Tree Figurines.

Crunchy Hot Chicken Bake

I wish I had a photo of this dish! Just one look at it and my mouth starts to water.

So when I find time in my menu schedule to make this again, I will post a picture of it next to the recipe. It is so good you'll want to make this dish at least 2 time a month if not more. *I substitute Fat Free soup & light mayo*

6 TBSP. Margarine, divided
1/2 C. diced celery
1/2 C. diced Onion
4 oz. can sliced mushrooms, drained
4 C. cooked chicken, diced
1 C. Mayo
1 (10 3/4 oz) can Cream of Celery Soup
1 tsp.Pepper
2 C. French's Fried Onion's

Melt 4 TBSP of Margarine in skillet, add celery, onion. Cook until tender, spoon into a 13x9 pan. In bowl add chicken, mayo,soup, melted 2 TBSP margarine. Pour over vegetables in pan. Bake @ 350 for 25 minutes. Take out top with the fried Onions, return to bake for 8 more minutes. Serve with hot bread.

I can't get enough of them, I read Cook Book's like I would a novel.

I guess you could say I collect them. My friends and  family know all about this. In fact while recuperating from surgery, my sister bought me a new cook book. And also a good friend of mine did the same.
So I guess I could start blaming them for my lack of space of where to store them. I had my husband build me a cook book cupboard and I have already filled it. Now I need him to build me another. (I am just a little scared to tell him I need another one. (lol)

My Baby is growing up...

July 7th was my only child's Birthday. She turned 11 yrs. old. WOW!
Now if I could just get her to listen to me, clean her room, and eat what is fixed for dinner. I would be a happy camper

I just had my 2 wk. Post - Op. And the Doc. says I am doing wonderful.
I just really cant stand sitting around every day.

On the bright side I am getting alot of reading time in. I just ordered 8 new cook books on Half.com And I am loving all of them! I will be posting a few new recipes today.
And I bought one extra for a give-a-way later on this month. So Keep checking back to find out when I will post it.

WONDERFUL WACKY CAKE



This cake has been a family favorite for many years.
It is so moist that you don't even need to frost it.

It received it's name because of the unusual way you mix it together.

Wacky or not, you will love this cake! Enjoy!

*this cake can be halved to make a 9x9x2 cake*

Sift together in a large mixing bowl:

3 C. Flour
2 C. Sugar
6 TBSP. Cocoa
2 tsp. Baking Soda
2 tsp. Salt

In the dry ingredients make 3 "holes".

In the 1st hole pour: 12 TBSP. Oil

2nd hole: 2 TBSP. Vinegar

3rd hole: 2 tsp. Vanilla

then pour 2 C. Cold Water over all. Mix until smooth.
Pour batter into a greased 9x13 pan. Bake @ 350 for 35 minutes
or until a tooth pick comes clean from the center.
