Ice Cream Zot Fizzy Pop

Have you ever had a Zot?  I use to eat them as a kid when I was little, and I could never have enough. I was so happy when I saw these in a local store. I made my husband but 6 packs.
Of course I had to come up with a special recipe for them.
Well here is my creation.

You will need:

 Vanilla Ice Cream
 Sprite or 7-Up Soda Pop
 Zot Candies: crushed
*if you can not find Zot candies another substitute 
 could be Pop Rocks.

Now all you do is layer in a cold glass.
Pour soda first, then a scoop of ice Cream.
Sprinkle crushed Zot's over Ice Cream, repeat.

Enjoy this refreshing version of the Old Time Soda Shop Classic.

This is  MY "newest" Journey. A While back I had sent out a request for anyone interested in joining me, in putting  together a Cook Book. I had several people respond. So I did my homework and read through each of their Blogs. I was looking for persons who shared the love of "Country" cooking along with using simple ingredients. I wanted to bring Our Country's diversity of flavor's from different States across the Country.  I am happy to say I found (4) Great Ladies who "fit the bill".

Strawberry Rhubarb Pie...


Last week I placed an order for some fresh Rhubarb.....
Little did I know it only came in a 20 lb. box!  Yup, you heard right...20 lbs.
So needless to say I was cutting and chopping all afternoon.
And just in case you are wondering how many cups a 20 lb. box gives you, and I am talking small pieces...30 Cups!!


And that brings us to today recipe....Strawberry  Rhubarb Pie.
This also happens to be one of my Dad's favorite's. Since I am heading home for the Memorial Weekend & family H.S. Graduation I thought I would take a couple with me. (*I am also taking THE BEST Potato Salad! I will share that later*)




*This will make (2) 9 inch Pies


4 C. Fresh Rhubarb; cut into small pieces
4 C. Strawberries: you can use frozen
1 1/2 C. Sugar
1 tsp. Cinnamon
6 TBSP Corn Starch
1 tsp. Lemon Juice

 Mix the above ingredients together and set aside to release juices, about 15 minutes.

In mixing bowl combine:

2 C. Flour
1 C. Brown Sugar
1/4 tsp. Cinnamon
2 Sticks Cold Butter: cut in small pieces

Mix together until crumbly.

Divide filling between (2) unbaked Pie shell's. 
then top with Crumb topping.
 Bake @ 400 for 45-50 minutes.

Cool completely before cutting.

*The crumb topping is optional, you can top with another pie crust. Make sure to cut slits in top for air holes.

Hello Everyone!
It's such a pleasure and an honor to write on Lark's blog for a guest post! I’m the author of the blog, The Girly Girl Cooks and have enjoyed teaching myself to cook while going to school to become a nurse here in Montana. Before I discovered cooking and blogging, my boyfriend and I would have frozen dinners, pizza or go out to eat. Now I spend my evenings in the kitchen making fun and exciting dishes. I've broken out of my shell of making the same dish over and over again, and now I rarely make the same thing twice! I'm not afraid to try new ingredients and different types of cuisine. Now I just want to try them all!

With summertime barbecuing coming into full swing, burgers and hot dogs are the hot food item of the season. One of my new favorite types of recipes to try is burgers/sandwiches that step away from the classical “beef hamburger.”
A couple weeks ago I made Tzatziki Sauce and Chicken Souvlaki on my blog and today while trying to figure out what to make for lunch, a light bulb sparked for me to make a Greek Chicken Sandwich using these two recipes!
Here is what you are going to need for this fantastic sandwich…
{2 servings}
-2 Chicken Breasts (4 oz each)
-1 tbsp Olive Oil
-1 tsp Cavender’s All-Purpose Greek Seasoning
-Condiments such as: Lettuce, Feta Cheese, Grilled Onions and Sliced Tomatoes
-Tzatziki Sauce
-2 Hamburger Buns
-1 tbsp softened Butter
 
About an hour before you are ready for lunch or dinner, toss the 2 chicken breasts, olive oil and Cavender’s seasoning in a Ziploc plastic bag to marinate. If you have never heard of Cavender’s seasoning, you gotta try it! It has changed the way I cook/eat chicken! 
While the chicken marinates, start heating up your grill and prepare the Tzatziki Sauce.
 
Here is what you are going to need for Tzatziki Sauce…
-1-1/4 cup Chobani Plain Greek Yogurt
-1 whole large Cucumber (seeds removed, grated and squeezed dry in a dish towel)
-2 cloves of minced Garlic
-2 tbsp Lemon Juice
-1/2 tsp dried Dill Weed
-1/8 tsp Salt
-1/8 tsp Pepper
-1/8 tsp Sugar
 
Just throw all the ingredients together in a bowl and mix to combine!
Ta-da! Easy peasy
Once you are ready to eat, grill up the marinated chicken on your BBQ and toast your Hamburger buns by spreading ½ tbsp of butter on each set of buns and toasting them under the broiler until golden brown, about 1 to 2 minutes.
 
Now that all the components are cooked and ready, it’s time to assemble the Greek Sandwich!
Put the Tzatziki Sauce on both toasted hamburger buns; add the grilled chicken breast, then the lettuce, onions, sliced tomato and feta cheese.
Totally delicious! Enjoy this fun and tasty sandwich!

"Bakers" & "Buyers" WANTED!!!!!

As many of you know I am trying to raise the required $2300.00  donation, in order to participate in the Susan G. Komen 3-Day for the Cure. Where I will walk  60 Miles in 3-Day's all in the name of helping to find a Cure!  Needless to say doing a fund raiser is what I NEED to make that goal.

So I am holding a Virtual Bake Sale!!  If you have never heard of this, let me explain.

A Virtual Bake Sale is just like a "real" bake sale. 
The only difference is that you can do it in the comfort of your home! 

I have started another Blog for just this purpose .Baking Up a Cure!!


All proceeds go directly to the Komen 3-day for the Cure foundation.

 This entire Sale in dependent on Volunteer's! 
All baked goods will be donated, as well as the ingredients & shipping cost's.

Guest Blogger Time!!!

It is wonderful to guest post here at Lark’s Country Heart.  Thank you for inviting me to share a recipe with your readers. My name is Katie and my blog is This Chick Cooks. I love cooking and trying out new recipes or coming up with my own creations. I share all types of recipes from healthy to indulgent, and every Wednesday I feature amazing recipes from other blogs. This Chick Cooks focuses on using ingredients that any cook can get anywhere.  Today I am going to share the recipe for some scrumptious Honey Wheat Pumpkin Muffins.   
I made these to use up some left over pumpkin and wasn't sure how well they'd go over since my husband isn't really a pumpkin kinda guy. But, everyone in the house loved these! Our little guy (J) wondered what the yummy sprinkles on top were and I told him it is sugar. So, before hubby left for work J whispered to him “Daddy, you should take one of those muffins to work. They are really good and they have sugar sprinkles on top!" These muffins are amazing! You'd never guess that they are made with whole wheat flour. They are moist and just plain wonderful- plus they have sugar sprinkles. What more can you ask for? :)
 
 
 
 
1/2 cup raisins ( you could substitute chocolate chips if you don't like raisins or you're feeling indulgent)
1 1/2 cups whole wheat flour
1/4 cup packed brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
3/4 cup canned pumpkin puree
1/2 cup vegetable oil
1/2 cup honey
1/8 cup finley chopped walnuts
 
Topping:
1/8 cup finely chopped walnuts
1/8-1/4 cup brown sugar
 
Preheat the oven to 350 degrees F (175 degrees C). Line 12 muffin tins.
 
Heat up a half cup of water in the microwave for one minute and the put the raisins into the water.
 
In a large bowl, stir together the whole wheat flour,1/4 cup brown sugar, cinnamon and nutmeg, baking powder, baking soda and salt.
In a separate bowl mix the wet ingredients. Drain the raisins and add the raisins and 1/8 cup nuts to the flour mixture. Dump in the egg mixture and stir just until moist. Divide batter between muffin cups. Sprinkle the tops of the muffins with the brown sugar and nuts.
 
Bake for 17-20 minutes or until a toothpick inserted in a muffin comes out clean. Cool on a wire rack.

Sour Cream Banana Nut Choc.-Chip Bread

Lark's Country Heart
I just love making quick breads. They are always so moist. This bread is SUPER moist due to the added Sour Cream. You have to taste this to see your Basic Banana Bread recipe
just doesn't cut it anymore.

As with most quick bread recipes, just mix all these ingredients together and blend until smooth. Do NOT over beat.

2/3 C. Butter or Margarine
1 1/3 C. Sugar
2 Eggs; beaten
1 1/2 C. Mashed Ripe Banana's
2 1/4 C. Flour
1 tsp. Baking Powder
1 tsp. Baking Soda
1/2 c. Sour Cream
1/2 C. Nut's *optional*
1 C. Chocolate Chips
1 tsp. Vanilla

Preheat oven to 350

Pour into a lightly sprayed and parchment lined loaf pan.
Bake for 1 hour.

*This is very freezer friendly bread*

Lark's "Fake Fried" Chicken

I LOVE Chicken! But my most favorite way to eat it is Fried.   NOT great for my waist line.

I have tried Oven Baked chicken recipes before.....and while some are good,
NOT all is created equal. So That got my mind to thinking. (and I don't need to tell you that when Mom is trying to figure out a new recipe...WATCH OUT!)
 I decided to see if I could combine several of the recipes I saw into ONE REALLY GOOD recipe.  Well this is what I came up with. And I have to tell you my husband didn't even notice that the chicken was skinless.  :) (Score one for Sneaky Me!)

*I end up Doubling this recipe*


6 TBSP.  Butter (I used I cant believe it's not butter)
2/3 C. Bisquick
1 1/2 tsp. Poultry Seasoning
1 1/2 tsp. Paprika
1/4 tsp. cumin
1 1/4 tsp. Salt (can use salt substitute)
1/2 tsp. Pepper
1/4 tsp. Garlic Powder
1/4 tsp. Onion powder
4 lbs. Chicken ( I use skinless)


Preheat oven to 425
In a 9x13 pan cut up the margarine & place in oven while heating to melt .


Mix all dry ingredients together until well blended.


When margarine is melted take out of oven. Set aside.
I like to keep all the chicken in a bowl full of water. I take one piece of chicken at a time, lightly shake off water.(do not pat dry. You want it wet to hold coating) toss into the coating. Then place "top side" down into the pan with margarine. * If using skin on chicken, place the skin side down. 


Bake uncovered for 35 minutes. Then turn each piece over and return to bake for another 15-20 minutes.  Making sure it is cooked all the way through.


Now if that isn't the Best "fake fried chicken" you have ever tasted...

Guest Post with Kim from The Farmers Wife

Kim and her Little Man.

Hey y'all! I'm absolutely thrilled to cook with you today! First things first, let me introduce myself. I'm Kimberly aka The Farmers Wife. I'm a coffeeholic, stay at home Mom and Wife, and yes I am actually married to a Farmer. Being a Farmers Wife makes life all the more interesting, but I love every moment of it. I've never had better produce to cook with in my life, and my Hubby is a wonderful inspiration for me. My little Sous Chef (my son) is also a big part of my life and blog. He is definitely my most challenging little future foodie, he is constantly coming up with ideas for treats he thinks sound good, and he says he "Wants to cook like Mommy someday!". When I first started The Farmers Wife, a couple of years ago, it was because I love to cook, and inventing my own recipes even more, but I was always forgetting to write them down. What started as a hobby, and a resource for myself and family, then turned into something SO much more! I enjoy my "Job" so much, and I love sharing all these goodies with all my friends.

When Lark asked me to guest post, I felt honored. She is possibly the dearest friend you could have. She will always tell you how it is, and make you laugh. And I happen to know that her Hubby LOVES biscuits and gravy so this is the perfect post for her! Now I don't claim to be southern, I was born in Tennessee, and have spent some time there over the years visiting family and what not. But I still remember my favorite part of going to visit them was getting good southern Biscuits and Gravy. Yes I know, my memories involve food, see I was always a foodie at heart! ;-) I haven't had good biscuits and gravy in several years, and awhile ago my Sister In Law challenged me to make my own. Sadly I've put this off for far too long thinking it would be incredibly difficult... I was so wrong... *Kick's self in the rear* Both the biscuits and the gravy were far easier than I ever imagined they would be, and the only thing I regret is not making these before. I now feel as if my life has been seriously deprived... hehe! If you like your traditional Biscuits and Gravy without the sausage, than you can just leave it out. But if you ask me the sausage is totally what makes this so yummy. You can totally use refrigerated biscuits, I honestly just wanted to try making them myself. hehe! Enjoy!





Ingredients:
Biscuits: recipe from joyofbaking.com
2 1/2 cups All Purpose Flour
2 1/2 teaspoons Baking Powder
1/2 teaspoon Salt
1 Tablespoon Granulated Sugar
1/2 cup Cold Butter or Margarine, cut into small chunks
3/4 cup Milk (I used 1%)
1 Egg, slightly beaten
Egg wash topping:
1 Egg, beaten
1 Tablespoon Milk







Gravy: Farmers Wife Original Recipe
1 lbs. Mild or Hot Pork Sausage
2 teaspoons Olive Oil (only if not enough fat from sausage)
2 Tablespoons All Purpose Flour
2/3 cup Heavy Whipping Cream
2 cups Milk
1 teaspoon Fresh Ground Black Pepper
Dash of Ground Nutmeg
Dash of Salt

Directions:
Preheat oven to 400F degrees. To make the biscuits first combine the dry ingredients in a large bowl with a whisk. Using a fork or pastry cutter, cut in the cold (must be COLD) butter until resembles coarse crumbs. Add the milk and egg and using a spatula mix until just combined (you want it to be sticky and moist and lumpy). Turn out onto floured surface and knead gently til it all comes together (do not over knead or your biscuits will be tough and not flakey). Roll out the dough to 1/2 inch thickness and using a biscuit or cookie cutter cut out your biscuits. Place on a lightly greased baking sheet, and brush the tops with the egg wash. Bake for about 10-15 minutes or until the tops are golden brown. Cool on a wire rack.

While they are cooling start your gravy by heating a large skillet on medium-high heat. Cook the sausage first, breaking up into pieces and brown. Once cooked, using a slotted spoon, scoop out the sausage onto a paper towel lined plate, leaving as much grease as possible in the pan. Add the flour to the pan and whisk to create a roux. (Note: if your sausage does not leave enough grease, add in a small amount of olive oil.) Once your roux forms, turn the heat down to medium-low and add the cream and milk. Whisk to combine, and then cook until thickened, stirring occasionally. Once thick, add in spices and sausage. Taste, and add in more spices as desired. Serve warm over biscuits.

Review:
I always do a review at the end of my recipes, and I have to say this one get 4.5 stars. The only reason I'm not giving it 5 stars as it is a very heavy meal therefore it won't make it into our monthly rotations (which is what my 5 star rating means), but we all loved it. Including my little Sous Chef, who devoured his portion in about 30 minutes flat!

Cilantro-Lime Rice...aka Cafe Rio Rice

If you have never tried Cafe Rio...you are missing out.
The  Cilantro Lime Rice is SOOOOO good.
This is the closest I can get to the REAL deal.

1 C. Uncooked Mexican Rice
2 tsp. Butter
2 Cloves of garlic minced
2 TBSP Lime juice
1 (15oz.) Chicken Broth
1 C. Water
3 TBSP. Chopped Cilantro

Combine the water, broth,butter, garlic and 1 TBSP Lime juice.
Cook in a sauce pan or rice cooker for 15-20 minutes or until rice is tender.  Fluff with a fork and add in remaining juice and the cilantro.

I like to pair this with my Marinated Chicken Kabob's.

Sour Cream Apple Crumb Pie

OH MY.....If you like apple pie, you're gonna LOVE this pie!

  I mean what isn't there to like about this pie? 
(well it does have room for a scoop of Vanilla Bean Ice Cream)

In a large mixing bowl add:

3 TBSP. Flour
1/4 tsp. Salt
1 C. Sugar
1/4 tsp. Nutmeg
1/4 tsp. Cinnamon
1 egg, beaten
3/4 C. Sour Cream
1 tsp. Vanilla
2 1/2 C. Sliced Granny Smith Apples
1 (9inch) unbaked Pie Shell

Mix well and then place filling into shell.
Place onto a sheet pan (to catch any drips)

Preheat Oven to 375 While oven is heating make up the crumb topping.

Crumb Topping:
3/4 C. Sugar
1/2 C. Flour
1 tsp. Cinnamon
1/2 c. Cold Butter ( I like to grate it)

Cut butter into dry ingredients until well blended. 
Set off to the side.

Place the pie (with out the crumb topping) into oven and bake for 30 minutes.
then pull pie out and sprinkle crumb topping on. Return back to oven and continue baking for another 15 minutes.

Serve warm or cold it is just as good the next day!
