Pumpkin Toffee Struesel Muffins


Happy Fall Y'all!
I LIVE for the Fall Season. Even if it is still 97 degree's 
outside, if the Calender says it is Fall...I Say it is Fall!
Fall also happens to be MY personal canning Season.
I order Pears, Apples and Peaches by the case.
To be made into some Delicious "butters" and Pie Fillings.
However...the one thing that SPEAKS of the Fall season 
to me is PUMPKINS.
I Love baking Pumpkin anything.
So I hope y'all don't get to tired of all the pumpkin
recipes, that I will be posting.
 
 
  Pumpkin Toffee Struesel Muffins
1 (18.25 oz) Boxed Spice Cake Mix
1 C. Pumpkin
1 Eggland's Best Egg
1 C. Water
1/2 C. Toffee Pieces
 
Struesel Topping
1 C. packed Brown Sugar
1 C. Flour
1/2 c. Margarine-cold cut into pieces.
 
 
 Preheat oven to 350
Mix the cake, mix with the water and egg. Beat until smooth.
Add in the pumpkin, mix well then fold in the
toffee pieces. Fill well greased muffin tin.
Scoop each cup 3/4 full. Top each one with
struesel topping. Bake for 22 minutes.
Cool in pan.

Enjoy the cool crisp weather.

Happy Fall Y'all!

What a fun way to make up something for your V.T. Ladies.
I found these cute Halloween Ceramic Loaf Pans
at Micheal's for $1.00 each! Cant beat that!

So why not Treat yourself as well as your Ladies
and make up some wonderful
Pumpkin Toffee Streusel Muffins 
and spread the Fall Cheer!

Perfectly Peanut Butter Cookies


Oh how I love Soft Peanut Butter Cookies
They also happen to be my hubby's favorite Cookie.
So these don't last to long at our house.
 Something I do to MY Peanut Butter Cookies
that is a little different, is that before I flatten
them with the fork....I roll them in powdered Sugar.
OH MY FLIPPING HECK....you must try it.

Lark's Perfectly Peanut Butter Cookies
2 C. Sugar
2 1/2 C. Brown Sugar
1 1/2 C. Margarine
1 1/2 C. Creamy Peanut Butter
2 tsp. Vanilla
4 Egglands Best Egg's
4 tsp. Baking Soda
1 tsp. Salt
6-7 C. Flour

Preheat oven to 350

First cream together the Margarine and sugar's.
Then add in Peanut butter, beat on high for 1 minute.
Add in egg's one at a time. Beat again for 1 minute.
Next add in the vanilla, soda, salt. mix together until blended.
Then add in flour, mix until the dough is not sticky.
If you need to add more flour, just add 1/4 C. at a time.

Scoop dough into balls, and roll in powdered sugar.
Place on a parchment lined cookie sheet, flatten down
each cookie with a fork.
Bake for 12 minutes.
Bundle them up and take to a friend!

Perfectly Moist Pumpkin Bread

This Pumpkin Bread is so moist.
Everyone I make this bread for say's the same thing.
And it is one of those "never fail" quick bread recipes
you will go back to year after year.
Add in some choc.-chips or top it with streusel
any way you fix it, it wont last long.



Perfectly Moist Pumpkin Bread
*This makes (3) 9x5 loaves

3 C. Sugar
1 C. Oil
1 C. Applesauce
4 Eggland's Best Eggs
4 1/2  C. Flour
1 tsp. Baking Soda
2 tsp. Baking Powder
2 tsp. Salt
4 tsp. Pumpkin Pie Spice
2 tsp. Vanilla
1 (15 oz.) Can Pumpkin
*Chocolate Chips, Butterscotch Chips
Preheat oven to 350

In a mixing bowl add ALL ingredients in the bowl.
Beat in low for a minute, and then on high for 2 minutes.
*If you are adding in Choc.-chips, toss them in 2 TBSP. of flour
before folding them into the batter.
Divide Batter among the (3) generously greased
loaf pans. *If topping with Streusel sprinkle on top
of each before baking.
Bake for 45-50 minutes.


Streusel Topping
1 1/2 C. Flour
1 C. Brown Sugar-packed
1 tsp. Cinnamon
3/4 C. Cold Butter-cut in small pieces

Mix together until you have fine crumbs.
Store in air tight container in fridge.

Chili Stack Up's

Oh I love fast, simple and easy week night meals.
It seems like during the week nights we are all on different
time schedules. However I love to set down as a family
for dinners...that is when I look to my fast fix recipes!
This really is a family pleasing meal, because each person 
can add his/her favorite toppings.
Chili Stack Ups
2 (16oz.) canned Chili *(homemade is great!)
Onion, diced
Shredded Cheese
Tomato's
Lettuce
Sour Cream
Taco Sauce
Frito Corn Chips

Now you just "stack" it all up on your plate.
starting on the Frito corn chips, adding all the toppings
of your choice.
*You can use Vegetarian chili*

W.W. Taco Soup

I am a "Lifer" Weight Watcher!
It is just a way of life for me and the way I cook.
I have to make myself remember  to always type
"regular" ingredients in my recipes...lol
This is one of my GO TO meals, through out the year.
My husband is not a big Soup fan, but he LOVES this Soup,
because it is more like a Chili.
It is so filling! And with low "point value"...yeehaw!
Taco Soup
1 lb. Extra Lean Ground Beef-Cooked and seasoned
1 Med. White Onion-finely diced
1 (16 oz.) Can F.F. Re fried Beans
1 (16oz.) Can Ranch Style Beans
1 (16oz.) Can Sm. red Kidney Beans-drained
1 (16oz.) can Pinto Beans-drained
2 (16oz.) Cans of Diced Tomato's
1 (16oz.) Can Kernel Corn-drained
1 (8oz.) can Tomato Sauce
1 (10 oz.) Can Rotel
1 (4oz.) can Diced Green chili
1 pkg. Taco Seasoning Mix
1 pkg. Ranch Dressing Mix
1 C. Water
After you have seasoned and cooked the ground beef,
transfer to a slow cooker or a Lg. stock pot.
Add in all ingredients. Stir well and set on low heat
to cook for 3-4 hours.  *You don't NEED to cook it that long
I have just found I like it to cook slow and longer
to help soften the beans plus let the flavors marinade.
You can serve with F.F. Sour Cream 
and Baked tortilla Chips.
*2 Points per 1 Cup*

A Little bit about MY journey.

I month or so ago, I was asked to share
how and why I love to RUN.
To be honest with you it took me a while to
write it down...because I don't think I have done anything
"special" that a thousand others have done too.
However with sharing my journey, it made me sit back and
bring to mind all the changes I have made.
My daily life has changed for the better.
I look forward to going on my morning/evening runs.

Homemade Garlic Parmesan Pizza Dough

If  making Homemade Pizza Dough intimidates you,
this is the recipe for you to try.
It doesn't take all day, the flavor is wonderful
plus it make a BIG batch!
I adapted this recipe from one I found on

Pizza Dough
3 C. Flour
1/2 tsp.Garlic Salt
1 C. Warm Water
1 TBSP. Red Star Yeast
1 TBSP. Olive Oil
4 tsp. Parmesan Cheese
1 tsp. Italian Seasoning
1 tsp. Cracked Black Pepper
Corn Meal

Start by placing the warm water and yeast in a glass bowl.
Let it become active for 5 minutes. 
Then add in the oil, garlic salt.
 In a mixing bowl pour the yeast mixture
then slowly add in pepper,Italian seasoning,
 cheese and 1 C.Flour
at a time. Mix on low, adding in remaining flour.
Transfer dough into a greased bowl.
Cover with a towel and let rise in a warm place
until doubled in size.
Roll out on floured surface.
Sprinkle corn meal onto pans before placing the dough,
adding your favorite sauce and toppings!
Bake for 18-20 minutes.
*Longer if you want a really crisp crust*

Triple "S" Popcorn Mess

Here is it.....The long awaited
ever popular, frequently requested
Triple "S" Popcorn recipe!!

We have been making this Sticky, Sweet, Spicy  Popcorn 
Treat in our home for awhile now.
I usually make an extra batch to share with a friend, 
or send into my husbands work.
Everyone  loves it!
My Daughter even Donated (3) Bags of this treat for the 
Baking Up a Cure Bake Sale this Summer.

The "funny" thing about this recipe, is the simplicity of it.
Make it once and you will make it again and again.
ENJOY!!
Triple "S" Popcorn Mess
Triple "S" Popcorn Mess
1 (10oz.) Bag of Marshmallow's
3 TBSP Margarine
2 (2.9oz.) Bag's Of Microwave Popcorn ( I use the light)
1 Box of Hot Tamale Candies

You can make this in the Microwave or on stove top.

Start by popping the popcorn. I then like to "sift" through the
popcorn to remove the uncooked kernel's.
Open the box of candies and cut each one in half. Set aside.
Next lightly spray a microwave safe bowl with cooking spray.
Add in the marshmallow's and margarine.
Heat for 1 minute, stir. Continue until all
marshmallows are melted.
Pour marshmallows over the popped corn and mix well.
Then sprinkle in the Hot tamales .
That's it! Easy, fast and sooooo yummy!

WOW .... Nothing Better than a Vacation!

I have just gotten back from a Week Vacation to California,
where my family spent time together  doing a TON of fun 
sight seeing. Even on the trip there we acted like tourist.
Just look at the size of this Rice Krispies Treat 
we found at a stop along the way!

We went to the Beach.....
 We had Breakfast at the ever popular Griddle Cafe, 
we about DIED when we all received our pancakes...
I mean LOOK at the size of those things!
(I had to put my spoon on them so you could have a size comparison)
I had the Cinnamon Strudel W/ Cream cheese
My hubby surprised me with a quick stop for a treat 
at the Nationally FAMOUS Magnolia Bakery!
The "cupcake Lady"..I even got to see how the frost them!
Then we found this Treat over at Joan's on Third
 We even visited the L.A. Farmer's Martket
 Can ya see me? Love this Old Station!
And of course We HAD to spend a few days at 
 I even found time to Break away from the rides 
and run the Disneyland 1/2 Marathon!
Coming through the gates to join my family!
ha,ha..my daughter didnt want to touch me...cuz I was "wet"
It was a FABULOUS week with the ones I love.
I cant think of anything better than making memories!

ALL AMERICAN APPLE CRISP

In remembrance of  those lost on 9/11
 And in honor of those who made a difference on that day....
 I am sharing an ALL American Apple Crisp

Today is a day I celebrate my Freedom.
Today I am Proud to be American.
Today I am thankful for ALL our Service Men and Woman.
Today is about Freedom, Faith, Family and Friends.

Lark's Country Heart


1 C. Flour
3/4 C. Quick Oats
1 C. Brown Sugar
1 tsp. Cinnamon
1/2 C. Margarine, softened
3 Lg. Tart Apples, peeled and sliced thin.
1/2 C. Brown Sugar
1/2 C. Sugar
2 TBSP. Corn Starch
1 C. Water
1 tsp. Vanilla
Mix together the first 5 ingredients until you have course crumbs.
Press 1/2 Crumbs into a lightly sprayed 9 inch baking dish. Then place thin sliced apple in rows over top. Set aside while you mix the rest of the ingredient's in a sauce pan. Cook on Med. heat until thickens. Pour over apples. Top with the remaining half of the crumbs.
Bake in a 350 degree oven for 1 hour.
Tastes great warm or cooled.

Pumpkin Spice Cream Cheese Muffins

Oh how I LOVE Pumpkin!
I am one of those who does NOT wait for Fall Season
to bake with pumpkin. I bake pumpkin treats year around.
I have my favorite recipes I make often, so I wanted
to start thinking up new pumpkin treats. 
I also wanted to make a treat that used Nutmeg in it.

THESE are the creation I came up with.
 I had a hard time deciding if they are a muffin or a cupcake.
I think I am safe to say they could be either.
They are so moist with just the perfect blend of pumpkin and spice.
Another favorite to add to the "make again" file.

Pumpkin Spice Cream Cheese Muffin's
1 Spice Cake Mix
1/3 C. Apple Sauce (or oil)
1 C. Water
4 Egg's
1/4 tsp. Nutmeg
1(3.4 oz) Vanilla Instant Pudding mix
1 C. Pumpkin
1(8oz.) Cream Cheese - softened
2/3 C. Sugar
1/2 tsp. Vanilla
Preheat Oven to 350
In a mixing bowl add: water, applesauce, nutmeg,
cake mix, pudding mix, pumpkin and (3) eggs.
Beat on low until mixed, then beat on high until smooth.
About 2 minutes.
In another bowl add the softened cream cheese,
sugar, egg and vanilla. Beat until smooth.
Place cupcake liners into muffin pans, 
lightly spraying them with Pam.
Scoop the pumpkin batter into each liner 3/4 full.
Taking the cream cheese mixture place a spoon 
full into the center of the batter.
Bake for 23 minutes.
Let cool on wire rack.
**I had also made a spiced Cool whip topping to
dollop on top of each muffin. (8 oz. thawed cool whip
and 1/4 tsp. nutmeg fold together) As you can see
from the photo's I totally forgot to add it on top.
Until after I opened the fridge and saw it....then
looked back to see that the muffins were almost
all gone.I had given some to my hubby's coworkers
and I had even shared with the neighbors. 
So please let me know how the spiced topping taste's
if yours last long enough to frost! (lol)

STRONG, HUMBLE, GIVING  individuals.
These are the people I want to feature, here on Friday.

Let's start this off with a Very Special Family.
The Meldrum Family
The Meldrum family are a
"power packed, strong, religious, fun loving, giving" group!
I have never met this family in person....yet I feel as if
I could drop by and visit and be very comfortable there.
I first heard about this family, (well more so of Faye) months
ago from a post I read on a Mandy's recipe Box.
I encourage you to go to Floppy Hat Faye and read from the 
beginning post's of Faye's story and her families journey.
Yes it may take a bit of "time" to read them, however I can
promise you that it will make a change in you for the better.

  I asked Stacey (Mother) a few questions about the family 
that I could share with y'all. So I will let her tell you in her own words.
If you know me, I am not one to talk about myself, even having the blog for Faye and writing things about us, is a bit hard for me, but if it even helps just one person....I have realized it is worth it!  And it is good for us, all the support we are given through Faye's blog....I don't know how we would do this with out all of these people praying, and pulling for us.  And the fact that Faye is one amazing little girl! 
 And cute...but I am a bit biased! 

Anyway so on to a little about us....Nick grew up in the Ogden,Utah area, while I spent my whole life in Layton, Utah.  Nick served a mission in Italy, and soon after he returned we  were introduced to each other..... The first date he asked me on I told him I couldn't go.  But later called him back and said I could!  After that he decided he wasn't going to ask me out again!  But we did go on the date, and he just couldn't  resist me...hahaha...and visa versa!  Our first date was the end of June, we were engaged mid August, and Married Nov 7th, (this year will be our 9th wedding anniversary!) 

 My occupation is a mom....it's what I have always wanted to be....and love every minute!  I did receive my associates from Weber State University in Ogden!  I had done some college before kids, and decided instead of throwing it all away I would at least finish the associates.  Nick received his bachelors from Utah State university in Landscape Architecture.  Then decided he wanted to go on to get his Masters in Real Estate and Land Development....hence what brought us to Texas!  He graduated just this last December from Texas AM...yep we are  &Aggies through and through...Utah State and A & M!  Also right after finishing school he got a job in College Station...he works for a company called Texas Digital as a project manager...they specialize in digital signs and menu boards.  
We have Mitchell who will be 7 in November, Faye who just turned 4 in July, and Nixon who will be 5 months on the 4th of Sept.

 I asked Stacey to tell me every one's favorite food:

Nicks favorite food:  you can't beat a good homemade burger....
or corn on the cob!
Stacey: I can't resist the carbonara from the cheesecake factory!
Mitchell: this guy loves him some mashed potatoes, Swedish pancakes, and  he is also a big fan of wings.
Faye: she is my fruit eater....she loves strawberries, peaches, watermelon.....absolute favorite raspberries!  And ever since she was little she would eat corn on the cob....cooked or not, she didn't care!
Nixon.....he just likes to be fed! 


What hobbies/ what don't you like to do?

I Love to sew...or do crafts!  The problem is I see something and instead of buying it, I think I could just make that!  Let's just say I have a few projects to finish, or ones I am dying to start!  One thing you will never catch me doing is anything that might or has the potential of embarrassing me...i don't do silly things!  Well every once in a while.....nick says it's a real treat!
Nick...any free time he has he would go, watch, or anything with movies!  Definitely the way to that guys heart is tell him you will go to the movie with him!  Is is also a wonderful handyman.I asked him what he absolutely despises....he said he hates when he steps in gum.....so therefore he tries not to even let the kids eat it....even though they know to throw it away....nothing can ruin a day more than stepping in gum!
Mitchell is our lover of anything Mario, or Phineas and Ferb!  He loves to play baseball!  Is a fantastic reader!  But oh so sensitive, he has such a soft heart, is the greatest big brother any crazy little sister could ask for!  Also I think when he grows up, he is going to be a lawyer or a salesman!  He is very good at reasoning, and giving you a different point to look at....which as his parents makes it really hard to tell him no sometimes!  
Faye....who knows,  that girl is all over the place!  She loves to play house, dress up, help me cook, help me clean....she is pretty easy going!  But stubborn....if she is going to do something it needs to be on her terms....you can suggest something, but until it is her idea...it's a no go!  She is a great helper!  In the morning, after she has bathed and got dressed she would straighten up the bathroom without even being asked, she would get the counters all cleaned off, and everything put back in it's place....let's hope that sticks!  Before she lost all of her hair ( well she still does this sow,times) right after taking a bath she would get the comb and comb out her own hair....made me smile seeing this little three year old looking in the mirror, getting all the tangles out of her hair!  Like I said she will still comb her hair....yep she only has a few stragglers...but she makes sure they look nice!
Nixon.....happiest little guy ever!  It's hard when you get to this guy...I am not even sure what to write!  I know on the weekends when I see him he is a good little guy....love him to pieces!
Both my boys are just like their dad....they get cranky in the evenings...and just want to go to bed! 
 But then are bright and early risers!
Faye and I on the other hand...could stay up forever....it's nice at the hospital we get this mom and Faye bonding time!  But I try and get her back on a bit more normal schedule for the weekend for dad! 

What is your daily schedule like?
Our schedule right now is I am with Faye from Sunday Night to Thursday night!  Then nick is with Faye from Thursday Night to Sunday Night!  They boys stay home most of the time, there are a few times they have made the trek for the switch, but usually nick or I just come and the other one heads right back!  We have been so blessed to have family and friends come to Texas to stay with the boys and take care of them while nick is at work and I am with Faye!  Since we are from Utah all of our family is also in Utah!  We are blessed that Nicks work is nice enough to let him work out of the office on Fridays...to give me a little more time home with the boys! 


I asked how their "story" started:

Starting around Christmas time we were in Utah visiting family, Faye started complaining about her legs, and within a day or two would not even put any pressure on them at all.  We were carrying her everywhere.  We took her to a doctor in Utah, they did crags found nothing to be wrong, told us to give her Advil, and if it didn't go away come back.  Well it went away...she would at least walk on them, but that was about it, the was no running, jumping, and watching her climb into the bed or the couch was a slow process.  When we got back to Texas she started complaint about her legs again, and we would spend countless nights rubbing her legs so she could sleep.  The only way she would walk on them usually was if we had given her some ib profen then she would walk on them a little more.  People kept telling us they were growing pains...and she has always had crooked looking legs, I don't know if it was because they hurt her so bad, but her legs started to look more and more crooked to us everyday!  Well one day she got sick with a cough, she had a fever that wouldn't go away, so we took her into the doctor, it hurt her to cough because of her legs.  The doctor didn't seem to concerned and said let's give her some antibiotics to get rid of her cough and when the cough is gone come back and we will see what we can do about her legs.  Well her cough finally went away, about a week before Nixon was born.  We hadn't got her into the doctor, and we had changed pediatritctians, so Nixon would see one we had never been to before!  When he was born and when we called to schedule his newborn check up we asked if they would be able to see Faye also.  So we took Nixon and Faye in!  The doctor ordered us to get more x-rays done, and blood tests!  That was on Friday afternoon.  Saturday morning we got a call saying we needed to get Faye to the emergency room right away, her hemoglobin levels were so low they were surprised she was even moving!  So Nick took her to the emergency room....and the rest is history, from they they went in a ambulance to Texas children's!  And began this life changing journey!
I look at this whole experience, and I cannot see how this is anything but a blessing.  Sure no one wants their kid to have cancer!  And when people tell me "heavenly father will not give you anything you can't handle" I don't think that saying is true!  I think he is just there to help you with the trials you are given!  Because if you would have told me even 8 months ago, that I was going to have a daughter with cancer...I would have told you that is one thing I don't think I could handle!  but seeing all for the generous people, and seeing the love in people's hearts for our family I feel truly blessed!  The comments through the blog, the words we hear from family and friends about people that have read Faye's blog and say it helps them to be a better person, I know they say we are helping them.....but I think that is where it comes full circle.....we are being lifted up by all these people, family, friends, strangers.....we couldn't do this without all the support, prayers, and love we feel!  
 
What have I learned from this....I have learned I am going to be a better, friend, mother, wife, sister, neighbor, person.  I have learned there is so much help, support love you can give people!  There is so much service out there to be done, and if there is something I can do to help someone I will!  Before I thought oh I can't give much, or I can't do much....so I wouldn't do anything!  But through all this I have learned every little thing or bit helps!  And all those little things have meant the world to me!  So never again am I going to feel that what I can do doesn't matter and won't matter!
A "Pay it Forward" Family!
 I want to tell Nick, Stacey, Mitchell, Faye and Little Nixon how thankful I am to them for letting me into their "home". Knowing the Meldrum family has improved my life!
