My Bread Pudding


Lark's Country Simple Bread Pudding

10-12 Slices of day old bread (torn or cut into pieces)
1/4 C. Butter - melted
1 tsp. Cinnamon
1/4 tsp. Nutmeg
3/4 C. Sugar- divided
6 Egglands Best Eggs
2 tsp. Vanilla
1/2 tsp. salt
3 C. Milk
*Optional 1/2 c. Raisins or Chocolate chips*

Preheat oven to 375
Place torn bread into a large bowl. 
Pour the melted butter over bread, toss to cover all the bread.
Next mix together 1/2 C. of the sugar, cinnamon and nutmeg.
Stir that into the bread to coat all the bread.
Place bread/sugar mixture into a 9x9 pan.
Beat together the eggs, vanilla, milk and
 remaining sugar until the sugar is dissolved.
Pour over the bread and let "soak" for 15 minutes.
*If you are adding in raisins or choc.-chips sprinkle 
them over the bread, before pouring the egg mixture on top.
Bake on center rack in oven for 30-40 minutes
or until a knife inserted into the center comes clean.

You can serve this hot or cold.
*My family likes it best topped with my Homemade Apple/Pumpkin Spice Syrup

Eggland's Best / Susan G. Komen / And Lark's Country Heart

DID YOU KNOW:

~ October marks the 26th Anniversary of  National Breast Cancer Awareness Month?

~ Susan G. Komen for the Cure, the largest breast cancer organization in the
US has invested nearly $2 billion since inception (1982) for breast cancer
research, education, advocacy, health services and support programs in the US?

~Egglands Best will be pledging a donation of $50,000 to 
Susan G. Komen for the Cure for the 2nd  year in a row?!


From Sept. 15th- Nov. 15th Egglands Best Eggs's will be
turning their famous red "EB" stamp on every egg to the
PINK  Komen for the Cure Ribbon!
I have always been an avid supporter of helping with
the fight against Breast Cancer.  So when I was contacted by the 
great people at Eggland's Best asking if I would like to do a special brunch 
celebrating Women who inspire me to do good in the community,
 For Breast Cancer Awareness....Well OF COURSE I SAID YES !!!
 I decided to host a community Bake Sale,
 were ALL my proceeds would be going to the 
Susan G. Komen  3-Day  for the Cure!
I sent out invitations then spent a few days in the kitchen
baking up a storm.....I went through 8 dozen Egglands Best Egg's!


Many of the Community turned out to show their support...

I sneaked in the middle there..decked out in pink!
I even got my hubby to were pink!


A "sweet" time was had by all.
These "Egglands Best Egg Sugar Cookies" 
were one of the best sellers of all!

I wish I could have included pictures of everyone that stopped in.
It was amazing how others opened their hearts as well as
their wallets, knowing they were helping in the fight against breast cancer.

My Spicy Stuffed Mushrooms


Last month a good friend of mine (who happens
to also belong to the group of ladies I 
play Bunco with once a month) had
made a batch of stuffed mushroom's
for her turn hosting Bunco.
They were wonderful! So that got me to thinking....
what would I put in her recipe to add 
a bit more "zip" to it?
Here is what I came up with........
Don't they make you drool?...

They were so darn good!

Spicy Stuffed Mushrooms
1 lb. Large White Mushrooms
1 (8oz.) Philadelphia Cream Cheese
1 lb. Jenni O Turkey Sausage
1 TBSP Chopped Chives
1/2 Small White Onion-finely diced
5 TBSP Franks Hot Sauce
1/2 tsp. Black Pepper
1 (4oz.) Can Diced Green Chilies-drained
1 C. Shredded Parmesan Cheese
Sea Salt
 Preheat oven to 350
Rinse the mushrooms and remove stem.
Pat Dry and sprinkle with a bit of sea salt.
Place on a cooking pan.

In a skillet cook sausage, chives, onion,
chilies, hot sauce and pepper. Drain of grease.
Cut the cream cheese into pieces and add
to the cooked meat, stirring until melted.
Turn off heat and stir in Parmesan.
It wont take long for the cheese to melt.
Then fill mushroom caps with meat mixture.
I like to really "heap" on the filling.
Bake for 30 minutes.
*Because the mushrooms hold a lot of water
you will have some juice in the bottom of the pan.
Just spoon out the juice and return to the 
oven for another 5 minutes.

Pumpkin Bars

I think I may have at one time or another
told y'all that I love Pumpkin....right?
Well these ate the FIRST thing I CRAVE  when
I get in my Fall Baking mood!
They are so moist and light,....
well until I smother it in Cream Cheese frosting. (lol)
These are perfect for those "last minute"
notifications that you need a goodies for the class,
or it is my turn to host Bunco night.
Or heck if you are like me, 
they are the perfect way to stop the CRAVING!

Lark's Pumpkin Bars
2 C. Sugar
2 C. Pumpkin
4 Egglands Best eggs
3/4 C. Margarine-melted
2 C. Flour
2 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Pumpkin Spice

Preheat oven to 350
In mixing bowl beat together sugar, pumpkin,
eggs and margarine. Next sift together the flour, 
baking powder, baking soda and spice.
Add the sifted ingredients to the pumpkin mixture,
mix well until smooth. Spread into a sprayed
jelly roll pan evenly.
Bake for 20-25 minutes or until cake springs back
when tapped lightly. Cool completely before
frosting with cream cheese frosting.

Cream Cheese Frosting
2 (8oz.) Philadelphia cream cheese - softened
3 TBSP. Margarine - softened
1 tsp. vanilla
4-6 C. Powdered Sugar
*Milk to thin out if to thick*
Beat all together on high until smooth

Pintrest Anyone?

I am stepping out of the kitchen today to 
share with you all a little Halloween Craft
I made the other day. I saw a frame like this on Pintrest.
(I am NEW to that whole thing.)

Anyway just thought I would share how my little project turned out.
The one I saw on Pintrest had the whole background
of the frame covered in google eye's.
I just thought a little less was more! (lol)
Now I just need to add in my Halloween Photo!

Mini Pumpkin Gingersnap Cheesecake

Now these little gem's were one of those "clever accidents" ...
You know the ones that you think up as you go along and hope
that they will turn out? This one was a HUGE hit!
I was making up a couple pumpkin dessert for a pot luck
and had a bit left over. So I grabbed what I had on hand
and these Babies were created!
Mini Pumpkin Gingersnap Cheesecakes
1 box of Gingersnap Cookies
1 (8oz.) Philadelphia Cream Cheese-softened
1 C. Pumpkin
2/3 C. Sugar
1 tsp. Pumpkin Pie Spice
1 tsp. Vanilla
2 Eggland's Best Eggs
Caramel Ice Cream topping

Preheat oven to 325
In a mixing bowl combine the Cream Cheese, spice, sugar and vanilla.
Beat until smooth, then add in the pumpkin and eggs.
Beat on medium speed for 1 minute.
Line your muffin pan with foil liners spray lightly with Pam.
Place one gingersnap cookie in the bottom.
Scoop the cheesecake filling into each liner filling 
3/4 of the way. Top with a TBSP. of crushed gingersnap crumbs.
Bake for 25-30 minutes or until the center is set.
Let cool in pan. Finish off each cheesecake with a drizzle of
caramel ice cream topping. Chill in fridge.
Remove foil just before serving. 
Accidents are new opportunities!

Soft and Chewy Caramel Corn

Home town Football Games, bring to my mind
cool crisp nights, tailgate parties with friends
and home baked goodies to share.
Caramel Popcorn is a popular "Fall" season treat,
I love  taking it along to the games and share.



Soft and Chewy Caramel Corn
(4) Bags of Microwave Popcorn
*I like to pop them first and sift out the un-popped kernels.
1/2  C. Butter
4 1/2 C. Sugar
2 1/2 C. Brown sugar
1 (12oz.) can Evaporated milk
2 C. Heavy Whipping Cream
1 tsp. Salt
1 1/2 C. Light Corn Syrup

Bring to a boil: Butter, Sugar(s),Milk and cream.
Then stir in Salt and corn syrup. 
Boil to a "Softball" stage.
Stirring constantly.
Pour over popped corn, mix well.
Lay out to "dry" on a sprayed pan.

And I am tired of the heat!
