Swedish Meatballs

With the New Year, comes new recipes.
There are (2) steps to making these
Swedish Meatballs.
The meatballs themselves,
(which you can use in any recipe!)
The Dill Cream Sauce is a simple way to
 turn meatballs into THE MAIN DISH.
Lark's Favorite Meatballs
1 lb. Lean Ground Beef
1 lb. Ground Turkey
1 Egg
1/2 C. Milk
1 C. Panko Bread Crumbs
1/2 C. White Onion~ finely diced
1 tsp. Salt
1 tsp. Black Pepper
Olive Oil

Combine all the ingredients together except 
the olive oil. Shape into 2 inch balls.
Saute in olive oil until no longer pink.
Drain on paper towel's.
Creamy Dill Sauce
2 TBSP. Flour
1 C. Heavy Whipping Cream
1/2 tsp. Dill Seed
1(14.5 oz.) Cream of Mushroom Soup
1 C. Beef Broth
*Fresh Chives~chopped

Combine all except the chives in a sauce pan
 over med. heat bring to a boil for 2 minutes.
Add cooked meatballs to sauce mix.
Toss in some fresh chopped chives.
Now you can serve them  as 
an appetizer or top off a stuffed
potato and make it into a main dish.

Savory Little Smokies

I hope you all had a very Merry Christmas.
I know it was a fun filled day of memories
for my family.  :)
The day after Christmas is kind of like
a "free day" as far as the menu goes.
We tend to each left overs and snack
through out the day. These little
smokies are perfect to set out.
We like them warm, however
I know a few friends that like them chilled.

Lark's Little Smokies
2 pkg. Hillshire Farms Beef Lil' Smokies
1 C. Chili Sauce
1 C. Sweet Baby Ray's BBQ Sauce
2 TBSP. Brown Sugar
2 tsp. Lemon Juice
1 C. Grape Jelly

In a sauce pan mix together the
chili sauce, BBQ sauce, brown sugar,
lemon juice and grape jelly.
Stir over medium heat for 3 minutes.
add in the little smokies.
Cover and simmer for 5 minutes.
That's it! Quick, and simple.
Now you can either serve them warm
or chill them for 30 minutes before serving.

Christmas Fondue Party

MERRY CHRISTMAS EVE!
I can not believe how fast this
month and Holiday Season has come.
However busy I am, I can honestly say
I wouldn't change a thing.
For me staying busy for the holiday's
means I am in the kitchen busy making 
up treats for orders, friends and family.
One way I like to share with close
friends each year, is by hosting a
FONDUE PARTY!
I like to make up a pot of creamy Chocolate
with a hint of cinnamon.
You can dip whatever you want in it.
For my family our favorites are
marshmallows, strawberries, Angel food cake,
and banana's.  Some times we add in
some apples and oranges.
*If you don't have a fondue pot,
you can also heat this up on the stove top
or even in your slow cooker.

CHOCOLATE FONDUE
1 (12 oz.) Semi Sweet Chocolate Chips
1 (12 oz.) Milk Chocolate Chips
2 C. Heavy Whipping Cream
1/2 tsp. Cinnamon* Optional
1 tsp. Vanilla 
Add all ingredients together
and heat on low, stirring until
the chocolate is melted.
Serve warm with your choice of
fruits, cakes or candies.

I love hosting the fondue party each year,
it is very simple to put together and everyone
of all ages enjoy it. It takes no time
at all to clean up either!  ;)

Our Traditional Christmas Haystack Cookies

When Christmas time rolls around
I find myself wanting to bake like crazy.
No Really I would LOVE it if I could make a
treat everyday....My family would love it too.
However I am not sure I could "remove"
all the temptation of eating the sweets
if they were in my kitchen for very long. (lol)

One Cookie I can not pass up making
each Christmas, (or eating for that matter)
are these HAYSTACK COOKIES!
These have become a Christmas Tradition.
Now I know they dont look like much.
I know there are prettier cookies out there
to be made and passed around.
Once you taste these crunchy mounds of
butterscotch goodness, you will want 
to take these to your next cookie swap!
The bonus of these cookies is that there 
are only 4 ingredients! 
Even the kids can make these!
Christmas Haystack Cookies
1 (10 oz.) Pkg. Mini Marshmallows
1(12 oz.) Chow Mein Noodles
1 (12 oz.) Pkg. Butterscotch Chips
1 C. Creamy Peanut Butter

In a large microwave safe bowl
mix together the butterscotch chips
along with the peanut butter.
Heat 1 minute, stir. Repeat
doing this until chips are all melted.
Then add the chow mein noodles
and marshmallows.  Stir until coated.
Drop by the spoonful onto wax paper.
Let cool and set up for at least 30 minutes.
Store in a covered container, if they last that long.
That's it!

Raspberry Spiral Cookies

When Christmas time rolls around
each year, it means it's time to
start making Cookies!
I like to try out a few recipes
before I make a big batch of them
for my treat plates I give out.
This is a "new" recipe I wanted to include
on the plates because the are so 
pretty.  While it does take some time for 
the dough to "chill" it is not a hard
or complicated recipe in the least.

Raspberry Spiral Cookies
1 C. Butter~ softened
1 1/2 C. Sugar
1/2 tsp. Baking Powder
1/2 tsp. Salt
2 Egg's
1 TBSP. Fresh Lemon Zest
3 1/4 C. All Purpose Flour
3/4 C. Raspberry Preserves
1 tsp. Almond Extract
Sugar~ to roll them in

Cream the butter on high for 1 minute.
Add sugar, baking powder, salt and mix.
Beat in eggs one at a time. Add in zest.
Add in flour and mix well. 
Divide dough into 2 disk's, wrapping
each tightly in plastic wrap.
Let chill for at least 45 minutes.
Place the disk of dough between 2 pieces
of wax paper and roll out as best you can
into a rectangle about 1/2 inch thick.
Mix together the preserves with the 
almond extract. Spread over dough evenly
within a 1/2 inch of edge.
Roll up dough, pinching to seal if breaks.
Roll tightly in plastic wrap, let chill
for at least 5 hrs. I just let it chill over night.
Preheat oven to 375
Line baking sheet with parchment paper.
Cut chilled dough into 1/2 inch thick slices.

Then "dip" each cookie into sugar.
Bake for 10-12 minutes.
Let cookies cool for a minute on the sheet
before removing. I like to drizzle some
white chocolate over top. 
Makes approximately 4 dozen

Popcorn Cake~ My Traditional birthday Cake!

Now don't judge the recipe by the name.
I know it sounds a little different,
but in this case different is YUMMY!
Ever since I can remember I
have chosen this as my Traditional
Birthday Cake. 
And believe it or not I have never 
had to make it for myself.
I have had family members make it for me
and this year a good friend of mine surprised
me by making it. Basically it is a giant
popcorn ball that has been shaped
in an Angel food cake pan.
You really need to make it before you make
up your mind that it doesn't sound good.
Then I bet y'all will be "hooked" too.   ;)

Popcorn Cake
22 C. popped popcorn~
*remove un-popped kernels
2 (12oz.) Pkg. Large Marshmallow's
2 Stick's Butter
1 C. Crushed Candy Cane's
1 C. Salted Peanuts
1 C. Small Gumdrops

Melt butter along with marshmallows in
a large saucepan over low heat until melted.
Place your popped popcorn into a lightly
sprayed large bowl. Add in the peanuts,
candy canes and gumdrops.
Pour melted marshmallows mixture
over and stir to coat. (this takes a 
little bit of muscle...)
Pour mixture into a buttered
(not sprayed) angel food cake pan.
Press mixture into pan tightly,
you want it to feel "packed".
Chill until firm.~ My Mom say's
chill over night.
Remove from pan and slice like you
would any cake. 
The picture shows some multi-colored
frosting drizzled on the outside of the cake.
This isn't necessary, it was just for decoration.

has published. Can I just say I feel
so lucky to be a small part

Every time I get a chance to review one
 of their FABULOUS Cook books I take it!
I have never been disappointed in the 
quality or variety of their cook books.
is going to be put to use often in my home!

I had a hard time choosing what
to fix first there were so many 
recipes that made my mouth water.
I finally decided on (2) to share with you.
The first one are these 

Sour Cream Potato Cakes
You're gonna want to fix these SOON!
I chose to serve them topped with 
extra sour cream, bacon and green onions.
DE-LISH!!!
  For the second recipe I decides to let my 
13 yr. old daughter pick a recipe she would 
like to make. You can tell she is her Mother's
daughter by what she decided on...lol

Cinnamon Roll Cake
Now this will tell you the ease of directions
that Gooseberry Patch Cook Books have....
My daughter did not need any help preparing
this Cinnamon Roll Cake at all. It turned out great
Sure moist!
Both of these recipes got rave reviews from
my entire family. I will be making them both
again in the future.

Meet Skylar & Brittany Smallwood Family

 Many of you may have received an invitation to a Online Pampered Chef Party from me, or heard me talking about my friends the Smallwood family...well here is their story~

March 6, 2010, was the day that Skyler and I started our Journey through life as husband and wife.  We moved in with Skyler’s two sisters Heather and Staci, in order to save some money, as Skyler had become laid off a few months before we were married.  For two years he worked on and off, mostly off but tried whatever he could to provide for us.  He would travel anywhere from 45 minutes out of town to work a picket line til 3 in the morning, to 3 hours to ELY, NV to work for his brother in law Nick.  The whole time we were hoping for the job he had been waiting for for ten years.  A job that was pretty secure once he got it. We wouldn’t have to worry about the next step, or when the job was going to end.  Then on February 13th, 2012 we received the best news…Skyler got that job he had been waiting for. 
     He started out traveling by bus every Tuesday for 3 ½  hours to get to work and would stay out there through Friday.  Things were going great, we got pregnant right away and we even started looking at homes to buy so that we would have more room for the baby.  The pregnancy was hard on me in the beginning…I was hospitalized due to dehydration and a significant amount of weight loss, so I had to quit my job. We figured we would be okay since Skyler was making a great living for us.  In June of this year, Skyler started taking the necessary steps to get this weight loss surgery done.  He reached the final step before he could move forward with the surgery, and that was to get blood work done.  When his Doctor received the results, she noticed that his kidneys weren’t functioning properly and so she sent him to a kidney specialist.  After several visits with the nephrologist and blood work for a month, they decided his kidneys weren’t getting any better with the medicine they gave him. 
     Tuesday July 31st, 2012 (his mother’s birthday), I received a phone call that neither of us were ready for.  His Doctor told me that he needed to get to the hospital right away because his kidneys were failing, and failing fast.  He got to work around 6:30 a.m. that day and by the time I got a hold of him; he had only worked a few hours.  I told him the news and so he started the long 3 ½ hour drive home.  That phone call had really shaken me up, and being 6 months pregnant I was already emotional.  While waiting for Skyler to get home, I pleaded with God to make me strong during this trial, especially around Skyler.  I got all my tears out before he got home, and I can tell you that through this whole ordeal, I was able to keep it together around him, and I know it’s because of that prayer and the prayers on our behalf from friends and family. 
     We didn’t know the exact extent of damage to his kidneys and the only way to know was to get a kidney biopsy.  Because of his size, the doctors were afraid that they wouldn’t be able to get a sample.  The Lord was by our side the whole time and they were able to collect not only one good sample, but they were able collect three good samples.  The biopsy was done on a Friday and they sent the kidney samples off to Cedar Sinai in California.  Results typically take 24-72 hours but because it was a Friday, we were told it could take even longer.  We had the weekend to prepare ourselves for the results and decided that if his kidney’s couldn’t be saved, we would look on the bright side that he was still alive, and we would take it one day at a time with the help of family and friends. 
     The results came on Tuesday.  The damage had been done.  85% of his kidneys were damaged and he would have to continue dialysis until he could get a kidney transplant.  In order to get on the transplant list, you can have up to a BMI of 38. Skyler’s BMI was at a 56.  We are determined to get Skyler a new Kidney.  Within a month of his hospitalization, Skyler dropped a whopping 50 pounds!  Even with that progress, his doctors suggested he get that weight loss surgery.  Just like his biopsy, his doctors didn’t have the faith that he could do it.  He told them he would reach that BMI within 6 months.  In four months, he underwent 5 surgeries, has lost 85 pounds, and is now down to a BMI of 46.  He has 2 months left to lose about 40 more pounds. 
     Throughout his multiple hospital stays, Skyler made friends everywhere. Especially the staff.  Even though he was the one lying in that uncomfortable hospital bed, unable to move because of the recent shock his body had undergone, he was able to get laughs out of the doctors and nurses and they became wrapped around his fingers.  His positive attitude and humor was contagious and all I could do was sit back in admiration every day at this incredible man that I married.  There was even talk about creating a T.V. show surrounding Skyler and one of his favorite Doctors who was Muslim.  They would go around visiting the doctor’s patients and Skyler would be there to cheer them up if they were sad, or to offer some medical assessment.  Doctor Mohammed would teach him along the way =).  If ever picked up, this show would be called “The Mormon and the Muslim”. 

     We know we can get through this and have all the motivation in the world; our son.  Kevin Thomas Smallwood was born on November 10th, 2012.  We want to live a healthy lifestyle for the rest of our lives in order to be around for Thomas and our future children as well as to enjoy the health benefits!  Before Skyler’s kidneys started to fail, we didn’t know what dialysis was exactly. Through Skyler’s story, we want people to be more aware of Kidney disease.  We don’t want people to get the phone call like we did.  There are things that you can to do to save your kidneys if you are at risk.  Early detection and treatment can often keep chronic kidney disease from getting worse. When kidney disease progresses, it may eventually lead to kidney failure, which requires dialysis or a kidney transplant to maintain life.  Back in the 1970’s there were about 10,000 dialysis patients in the United States  alone, and today there are over 300,000 and they anticipate that number to grow at a fast pace. Here are some facts about Chronic Kidney Disease:

-26 million American adults have CKD and millions of others are at increased risk.
-Heart disease is the major cause of death for all people with CKD.
-Hypertension causes CKD and CKD causes hypertension.
-Persistent proteinuria (protein in the urine) means CKD is present.
-High risk groups include those with diabetes, hypertension and family history of kidney disease.
-African Americans, Hispanics, Pacific Islanders, Native Americans and Seniors are at increased risk.
-Three simple tests can detect CKD: blood pressure, urine albumin and serum creatinine.
